Bagel shops boil and bake on site and sell out of favorite flavors by late morning; donut shops open before dawn and are often family-run; patisseries and cake studios take custom orders for weddings and birthdays and usually need one to two weeks' notice. Ice cream parlors, gelato shops and frozen yogurt bars are seasonal in the northern states and year-round in the South and on the West Coast.
